Survival is the base game with other people in it. You spawn with nothing, punch a tree, and everything you own afterwards is something you or somebody you know built. Most servers add a claim system on top so the hours you spend on a base are not undone by one stranger with a diamond pickaxe — GriefPrevention and its golden shovel is the usual answer, while Lands and Towny do the same job with more structure.
Beyond claims, the differences are in economy and distance. Some servers keep a spawn shop and a random-teleport command that drops you thousands of blocks out; others run small maps where you walk. Ask how old the world is and when it was last reset. A two-year-old world means every diamond within 5,000 blocks is already gone, and a reset next month means your base is temporary.
What to look for: staff who answer rollback requests, a stated reset policy, and a shop that does not sell diamond gear for real money. Check the player count at your own play time rather than the peak — a server that is full at 8pm in another timezone is an empty world when you log on.
