Vanilla servers run the game as Mojang ships it, or close enough that you would not notice. No custom enchants, no ranks, no shop, often no home command. A few run genuinely unmodified server jars; most run Paper with a handful of quality-of-life plugins and describe themselves as semi-vanilla.
That restraint is the appeal. Progression is the game's own: netherite takes as long as it takes, a villager trading hall is worth the afternoon, and an iron farm is genuinely useful rather than being replaced by a sell command. It also means grief protection is social rather than technical, which is why so many of these servers are whitelisted.
Find out what vanilla means on the specific server before joining. Ask about the plugin list, whether difficulty is set to hard, whether keepInventory is on and whether the End has been reset. Those four answers tell you more than any amount of description text.
